The crisp texture, well-cut acidity and subtle, chalky underpinning recommend this as an aperitif, but the depth and focus found amongst the ripe white cherry, blood orange granita, candied ginger and raspberry glacée notes suggest this for food pairing as well. Try this with charcuterie, seafood and poultry. Meunier and Chardonnay. Disgorged August 2021. Drink now. 300 cases imported.

Composed of 83% Meunier (5% of which is vin rouge) and the rest Chardonnay, the NV Champagne Oeil de Pedrix Extra Brut was disgorged in December of 2020 and has just the slightest hue of copper. The nose is floral, with ripe strawberry, mushroom, and raspberry eau de vie, while the palate is savory and vinous with ripe berries, orange rind, tea leaf, and a saline finish. Drink over the next 10 years.

The NV Extra Brut Oeil de Perdrix is a compelling Meunier-based wine. Light in color, with gorgeous aromatics to match its airy, ethereal personality. Chalk, mint, orange peel, white pepper and light floral accents. This is an especially fair style, but it works. Disgorged: March, 2021.
